An interview with Richard Marken

Managing Partner of Cutwater Brewery

Richard Marken knows what it takes to launch a brewery from scratch. With 35 years of experience in the food and beverage industry across the globe and successful operations, including Yew Street Food Hall and Bright Eyed Brewing in Kamloops, Richard is bringing his proven formula to Lake Country. Cutwater Brewery, set to open in December 2025, represents his confidence in a community he believes is underserved and ready for what he's building.

You already have successful operations in Kamloops. Why expand to Lake Country?

Every time we travelled to Kelowna, we'd stop at Upside Cider. I realized the community was underserved and that having a Cidery right on the highway didn't deter customers. After looking at several properties throughout Central Okanagan, we decided on Lake Country for Cutwater Brewery. The location made sense for locals, and its proximity to the University is a big plus.

 

What makes Lake Country attractive from a business perspective?

The backbone of any brewery restaurant is the local community. Our General Manager will be part of the community – that's important to me. In Kamloops, I'm on several boards and involved with local events. I plan to do the same here. You need to be invested in the place you're operating.

Are you concerned about finding staff in a smaller market?

Not really. I know that age group is looking to work somewhere with a good vibe where they can make money. Cutwater will provide both, along with a great location that's easy to get to for locals. The proximity to the UBC Okanagan Campus helps with recruitment too.

 

What are your plans for growth?

We're already planning to build a patio to expand for the 2026 summer season. Expansion will always be a possibility, but the first priority is getting Cutwater open. It's been a two-year process, and we're getting established in the community. I need to make sure my partners are happy first.

 

Any concerns about entering this market?

I have no fears about the future of Cutwater Brewery in the community. I believe it's going to go well, and I have good feeling that the community will support us. Lake Country is ready for what we're bringing.
